November 6 is National Nachos Day: Some Great Recipes

Posted in Tex Mex Recipes

In case you didn’t know, November 6 is a very important day for Tex-Mex food lovers everywhere. It is National Nachos Day! And who doesn’t love nachos? Even the President of the United States is a nachos lover. He says that if you put a plate of nachos in front of him, he would eat them until guacamole is coming out of his eyeballs.

So, in honor of Nachos Day, and for nachos lovers everywhere, here are two nachos recipes.

Here’s a nachos recipe from AllRecipes.com. This recipe takes about 30 minutes of prep time and 20 minutes to cook.

You will need:

  • One pound of ground beef
  • One package of taco seasoning mix
  • Three-fourths of a cup of water
  • One 18-ounce package of tortilla chips
  • One cup of shredded sharp cheddar cheese
  • One can of refried beans
  • One cup of salsa
  • One cup of sour cream
  • One can of pitted black olives, drained and chopped
  • Four green onions, diced
  • One four-ounce can of sliced jalapeno peppers, drained

Here’s how to make them:

The first thing you do is cook and stir the ground beef in a skillet over medium heat until the beef is browned and broken into small pieces. This will take about five to ten minutes. Drain the grease. Then stir in the taco seasoning and water and simmer the mixture until it thickens, about eight to ten minutes.

Preheat the broiler. Your oven rack should be about six inches from the heat. Line a baking sheet with aluminum foil.

Spread out the tortilla chips on the baking sheet. Sprinkle on the cheddar cheese, refried beans and beef mix. Broil this in the oven until the cheese is melted. But keep an eye on the chips so you don’t burn the cheese. This should take just a few minutes.

Take the chips from the oven and top them with salsa, sour cream, black olives, green onions and jalapeno peppers. Then enjoy!

Reese’s Nachos

Here’s a recipe for dessert nachos, which you may not have known even existed. Yes, there are dessert nachos! These particular dessert nachos are made with Reese’s peanut butter cups and Reese’s pieces. This recipe is from Delish.com. It takes only about ten minutes.

You will need:

  • 20 graham crackers, broken into pieces
  • Six chopped Reese’s peanut butter cups
  • One packet of Reese’s pieces
  • One cup of mini marshmallows
  • One-quarter cup of peanut butter, warmed in a microwave
  • One-quarter cup of melted chocolate

Here’s what you do:

First, heat the oven. Put the graham crackers in an ovenproof skillet then layer them with the peanut butter cups, Reese’s Pieces and the marshmallows. Drizzle the peanut butter and chocolate over the top.

Put the skillet in the oven and heat the ingredients until the marshmallows are toasted and the nachos are warm. Serve them right away.
